학교 과제인데 양식 레시피인데 영어라서 .. 해석좀 부탁드립니다. 내공드릴께요 ^^
<cream of broccoli soup>
1). heat butter in pan and saute the onion, celery, leek and broccoli stems.
2). add the stock and cook more until tender.
3). puree the mixture until it is completely. add to the veloute and simmer slowly for 10 minutes.
4). adjust the seasoning with salt and pepper to taste.
5). Add to the heavy cream.
6) Strain through either sieve or cloth.
7) Garnish with broccoli florets before serving.
<Madeira Sauce>
1.saute meats and vegetables in hot oil until brown.
2.Add tomato paste, put stock and cook more.
3.Combine Madeira wine, fresh thyme, bay leaf and whole pepper. Reduce the mixture to half.
4. Add stock and reduce three fourth. Strian through cloth.
5.At service, adjust seasoning and monte au beurre.
<ltalian Meat Sauce>
1. Saute onion, celery and then garlic in sauce pan with oli.
2. Add the ground and let it cooked throughly and add tomato paste.
3. Add the canned tomato and stock, bay leaf, basil and oregano.
4. Continue to cook, stirring constantly until the sauce is a little thick.
5. Season with salf and pepper.
